Hopefully you’ll celebrate Oregon Wine Month with the innkeepers of the Oregon Bed and Breakfast Guild and stock up on fine Oregon Wines, putting some aside for this smooth Wine Sorbet shared by Yamhill Vineyards Bed and Breakfast. Blackberries are also lovely in this light dessert.
Basic Wine Sorbet
Ingredients:
¾ cup water
⅔ cup sugar
1 ¼ -1 ½ cups White Riesling, Pinot Gris or Chardonnay wine
Use berries of choice or try nectarines, peaches and other fruit.
The innkeeper prefers using 1 ¼ cups of wine
Instructions:
Combine water and sugar in a small saucepan. Heat slowly over low heat until sugar is dissolved. Add wine, stir and remove from heat. Cool. Freeze according to ice cream maker instructions. I put the mixture in a 4 cup measure cup in the freezer and stir frequently until frozen. At this point you can put small amounts in a blender and blend for a smoother sorbet. Put sorbet into an airtight container to keep it for awhile. Enjoy.
