Day 6 of the Oregon Bed and Breakfast Guild’s 12 Days of Holiday Cookies
Candied orange peel and toasted pecans add depth to these lovely biscotti. A couple times a year we head into California to visit our kids. We always stop at the Heath Ranch in the Sacramento Valley to pick up fresh organic citrus. They supply our dose of California sunshine in the dark winter nights we have at the Old Parkdale Inn in Northern Oregon. Makes for some wonderful fresh orange juice, too.
We brought home 20 pounds of organic Valencia oranges this last tip, ate at least one or two a day and made some crunchy, tangy candy from the fresh orange peel. Chopped these up and added them to the Candied Orange Pecan Biscotti. We invite you to dip delicious biscotti into your favorite beverage.
Candied Orange Pecan Biscotti
Preheat over to 350°. Place ¾ cup pecans on a cookie sheet and toast for 8-10 minutes.
Allow to cool.
To prepare the Biscotti dough
½ cup butter
¾ cup sugar
2 eggs
2 Tbs orange liqueur
Zest of 1 orange
2 cups plus 2 tbs all purpose flour
1 ½ teaspoon baking powder
¼ teaspoon salt
Cream butter and sugar, beat in eggs, orange liqueur, and orange zest
In a separate bowl combine flour, baking powder, salt, pecans and orange ‘candy’ and mix into the egg batter until just blended. Divide dough in half.
Place onto a floured surface and form into into two logs about ½ inch thick, 1½ inch wide and 14 inch long logs. Place on greased and floured baking sheet. Bake in the middle of a preheated 325° oven for 25 – 30 minutes or until set and lighted browned. Transfer to rack and let cool 5 minutes. Place on a cutting board and with a serrated knife slice diagonally about ½ inch thick. Place the slices upright on a baking sheet and return to the oven at 300° for 10-15 minutes to dry slightly.
