Day 8 of the Oregon Bed and Breakfast Guild’s 12 Days of Holiday Cookies
To celebrate 12 Days of Holiday Cookies. Erin, innkeeper of A’Tuscan Estate Bed and Breakfast shares her recipe, and tempting photo for her Salted Caramel Apple Cookies
Ingredients
- 2 packages Apple Cider Muffin Mix, 6.5 oz
- 8 Tbsp unsalted butter, room temperature
- 1 large egg
- 1 ½ tsp vanilla extract
- 1 medium apple, grated and juice squeezed off
- 5 oz thick caramel syrup
Instructions
- Preheat oven to 350 degrees and line two baking sheets with parchment paper or Silpats.
- Cream the butter until light and fluffy, 2-3 minutes in the bowl of a stand mixer or a large bowl using a hand mixer.
- Mix egg and vanilla extract into the butter. It may look runny.
- Add the muffin mix to the butter mixture and mix until just combined, taking care not to over-mix.
- Fold in the grated apple and caramel sauce.
- Scoop 2 Tbsp of dough ono the prepared baking sheets.
- Bake for 11-13 minutes, until cookies are just turning golden around the edges, but are still soft.
- Let cookies cool on the pan for a couple minutes before moving to wire cooling rack.
